About Mariusz Ledwoch: The Executive Chef of Deadly Rabbits Concepts Poland

Born and raised in Poland, Chef Mariusz Ledwoch possesses over 20 years of culinary experience, specialising in Central European, Mediterranean, and Italian cuisines. Surrounded by his family's culinary traditions and profoundly influenced by his father, an enthusiastic home cook, Chef Ledwoch's earliest memories of cooking involve preparing crayfish with his father at the tender age of seven—an experience that ignited his lifelong passion for the culinary arts.


At the age of 18, he entered the culinary profession by working part-time at an Italian restaurant, where he rapidly advanced from dishwasher to head chef at Bacio Italian Restaurant in Warsaw in just under three years. This early exposure fostered a profound appreciation for the art of Italian cooking, ultimately laying a solid foundation for his future endeavours.


Seeking to refine his skills, Chef Ledwoch relocated to London at the age of 24, where he completed a two-year culinary training program at a prestigious hotel. This formal training allowed him to master precise cooking techniques and efficiently manage kitchen operations, further shaping his cooking philosophy.


Upon returning to Poland, he rejoined his initial employer, assisting the Italian dining group in expanding to new locations. Over the subsequent 15 years in Warsaw, he significantly impacted several of the city's most esteemed Italian and Central European restaurants.He has developed a signature style that honours his roots while incorporating the sophisticated techniques he has honed throughout his career.


His versatility was also demonstrated at ArtBistro Stalowa 52, a modern bistro specializing in French-inspired Central European cuisine, and as an event chef at Endorfina Restaurant, where he successfully led a team of chefs in preparing banquet dinners for over 2,500 guests. As the executive chef at Vinoteka wine restaurant, he curated contemporary chefs' table menus, allowing his culinary passion and expertise to shine truly.


In 2021, Chef Ledwoch stepped outside his comfort zone to take the helm at Baila Warsaw, delving into the vibrant world of South American cuisine. In 2025, Chef Ledwoch joined Deadly Rabbits Concepts as Group Chef for their venture in Poland.


His role involves bridging the culinary identities of Hong Kong and Poland by introducing Ask for Alonzo’s culinary concepts to Warsaw, celebrating Mediterranean seasonality through family-style Italian cuisine infused with timeless traditions. Additionally, he is assisting the group in establishing the exciting new concept of Slavic Social, a refined restaurant at Hilton Warsaw that presents traditional Polish recipes in modern interpretations, ensuring that the heritage remains vibrant and alive. His culinary beliefs closely align with the dining group's philosophy, which emphasises the importance of staying true to culinary origins as the foundation of an enriching dining experience.
